Syrian Mechshe Kousa
Ingredients
- 1 lb Ground Steak
- 8 small zucchini
- ½ cup short-grain rice, rinsed
- 1 tsp allspice
- ½ tsp cinnamon
- Kosher salt and black pepper
- 1½ cups tomato sauce
- 4 garlic cloves, minced
- 2 tbsp lemon juice
- 1 cup water

Hollow each zucchini using a corer or small spoon, leaving a ¼-inch wall. Do not pierce the bottoms.

Combine raw beef, rinsed rice, allspice, cinnamon, salt and pepper. Mix gently.

Loosely stuff each zucchini, filling only ¾ of the way to allow rice to expand.

Arrange stuffed zucchini tightly in a heavy pot.

Mix tomato sauce, garlic, lemon juice and water. Pour over zucchini.

Bring to a boil, then reduce to a low simmer. Cover and cook 45–55 minutes until zucchini is tender and filling is fully cooked.

Taste the sauce and adjust seasoning before serving.
Butcher's Tip
Pack the zucchini tightly in the pot so they hold each other upright and do not unravel during cooking.
