Fried Beef Kibbeh
Ingredients
- 1 lb Ground Steak (shell)
- 1½ cups organic fine bulgur
- 1 organic yellow onion, grated
- 1 tsp allspice
- ½ tsp cumin
- Kosher salt and black pepper
- 1 lb Ground Steak (filling)
- 1 organic onion, finely diced
- 1 tbsp extra-virgin olive oil
- ½ tsp cinnamon
- 1 tsp allspice
- ¼ cup pine nuts, optional
- Non-GMO neutral frying oil
- Organic lemon wedges
Instructions

Soak bulgur in cool water for 15 minutes, then drain and squeeze dry.

Knead bulgur with 1 lb beef, grated onion and seasonings until smooth.

Brown the filling beef with diced onion, olive oil and spices. Cool.

Shape the shell around spoonfuls of filling and seal firmly.

Heat frying oil to 350°F.

Fry in small batches until crisp, deeply browned and safely cooked through.

Drain well and serve with lemon.
Butcher's Tip
Fry in small batches to keep the oil temperature steady — crowding the pot drops the heat and makes the kibbeh greasy instead of crisp.
