Korean-Style Flanken Ribs

Ingredients

  • 2 lbs Boneless Flanken Strips
  • 1/3 cup soy sauce
  • 2 tbsp sesame oil
  • 2 tbsp brown sugar or honey
  • 4 cloves garlic, grated
  • 1 tbsp fresh ginger, grated
  • 1 tbsp rice vinegar
  • 2 scallions, sliced
  • Sesame seeds for garnish

Instructions

    Whisk together soy sauce, sesame oil, sugar, garlic, ginger, and rice vinegar.

    Add flanken strips to marinade. Marinate at least 30 minutes, up to 4 hours in the fridge.

    Heat grill or cast iron to high. Remove flanken from marinade, shaking off excess.

    Grill 2–3 minutes per side until caramelized and slightly charred. The sugar in the marinade will create beautiful color.

    Garnish with scallions and sesame seeds. Serve over rice.

Butcher's Tip

Don't skip the char. The slightly burnt edges are where the flavor is. High heat, fast cook.
