Ground Beef
Kibbeh Hamdah
Ingredients
- 1 lb Ground Steak (kibbeh)
- ¾ cup finely ground organic long-grain rice
- 1 tsp kosher salt
- ½ tsp allspice
- ½ lb Ground Steak (filling)
- ¼ cup organic parsley, chopped
- ½ tsp allspice
- ¼ tsp cinnamon
- Kosher salt
- 8 cups kosher beef stock
- 4 organic celery stalks, chopped
- 2 organic carrots, chopped
- 2 organic potatoes, cubed
- 1 organic zucchini, chopped
- 1 organic onion, chopped
- 3 organic garlic cloves
- 1 tsp dried mint
- ½–¾ cup freshly squeezed organic lemon juice
- Kosher salt and black pepper

Mix 1 lb beef, ground rice, salt and allspice into a workable kibbeh dough.

Combine filling ingredients separately.

Form small kibbeh shells around the filling and seal.

Bring stock, celery, carrots, potatoes, onion and garlic to a simmer.

Carefully add kibbeh and maintain a gentle simmer.

Add zucchini and mint.

Gradually add lemon juice, tasting until the broth reaches a bright sour balance.

Continue cooking until vegetables are tender and beef is safely cooked.
Butcher's Tip
Add the lemon gradually and taste as you go — the hamdah (sourness) is the soul of this dish but it should be bright, not harsh.
