Syrian Kibbe Cherries

Ingredients

  • 1½ lb Ground Steak (kibbeh)
  • ¾ cup finely ground organic long-grain rice
  • 1 tsp kosher salt
  • 1 lb Ground Steak (filling)
  • 1 tsp allspice
  • ¼ tsp white pepper
  • Kosher salt
  • 1 tbsp extra-virgin olive oil
  • 2 cans kosher dark sweet cherries with juice
  • 2 tbsp tamarind concentrate
  • 2 tbsp fresh organic lemon juice
  • 1–2 tbsp organic cane sugar, to taste
  • Pinch kosher salt
  • Water as needed

Instructions

    Knead 1½ lb beef, ground rice and salt into a smooth kibbeh mixture.

    Brown filling beef with seasonings and cool.

  3. 3

    Form small filled kibbeh balls or rolls.

  4. 4

    Combine cherries, tamarind, lemon and salt in a wide pot.

  5. 5

    Simmer and adjust the sweet-tart balance with sugar and lemon.

    Carefully add kibbeh.

    Cover and simmer gently until kibbeh is safely cooked and the cherry sauce has reduced slightly.

Butcher's Tip

The sauce should be both sweet and sour — taste it before adding the kibbeh and get the balance right first. It's much harder to adjust once the kibbeh is in.
