Ground Beef
Sephardic Beef Bourekas
Ingredients
- 1 lb Ground Steak
- 1 onion, finely diced
- 3 garlic cloves, minced
- 1 tsp allspice
- ½ tsp cumin
- Kosher salt and black pepper
- ¼ cup fresh parsley, chopped
- 2 sheets puff pastry, thawed
- 1 egg, beaten
- 2 tbsp sesame seeds
Instructions

Brown beef with onion and garlic over medium heat. Season with allspice, cumin, salt and pepper.

Cook until the mixture is flavorful and fairly dry. Stir in parsley. Cool completely.

Preheat oven to 400°F. Line a baking sheet with parchment.

Cut puff pastry into 4-inch squares.

Place a heaping tablespoon of filling in the center of each square.

Fold into a triangle or rectangle and press the edges firmly to seal. Crimp with a fork.

Brush tops with beaten egg. Sprinkle with sesame seeds.

Bake 20–22 minutes until puffed and deeply golden.

Cool slightly before serving — the filling is very hot.
Butcher's Tip
Seal the edges firmly and double-crimp with a fork — any gap and the filling will leak out and burn on the pan.
