Ingredients

  • 1 lb Ground Steak
  • 6 bell peppers
  • ½ cup short-grain rice, rinsed
  • 1 small onion, grated
  • 1 tsp allspice
  • ½ tsp cinnamon
  • Kosher salt and black pepper
  • 1½ cups tomato sauce
  • 4 garlic cloves, minced
  • 2 tbsp lemon juice
  • 1 cup water

Instructions

    Slice the tops off the peppers and remove seeds and membranes. Reserve the tops.

    Combine beef, rice, onion, allspice, cinnamon, salt and pepper. Mix gently.

    Fill each pepper without packing tightly. Replace the tops.

  4. 4

    Arrange peppers upright in a heavy pot.

    Mix tomato sauce, garlic, lemon juice and water. Pour around the peppers.

    Bring to a boil, then reduce to a low simmer. Cover and cook 50–60 minutes until peppers are tender and rice and meat are completely cooked.

    Serve with the braising sauce.

Butcher's Tip

If the peppers tip over, wedge them with pieces of the reserved tops or crumpled foil to keep them upright.
