Ingredients
- 1.5 lbs Skirt Steak
- 3 cloves garlic, minced
- 2 tbsp olive oil
- 1 tsp cumin
- 1 tsp smoked paprika
- Juice of 1 lime
- Salt and black pepper
- Corn tortillas, for serving
- Fresh cilantro, diced onion, lime wedges

Combine garlic, olive oil, cumin, paprika, lime juice, salt, and pepper. Coat skirt steak and marinate 30 minutes minimum.

Get your grill or cast iron screaming hot. Skirt steak needs high heat and speed.

Grill 2–3 minutes per side for medium-rare. Do not overcook — skirt steak gets tough fast.

Rest 5 minutes. This is critical. Then slice thin against the grain at a 45-degree angle.

Serve immediately on warm tortillas with cilantro, onion, and lime.
Butcher's Tip
Skirt steak has a very pronounced grain. Slice against it or the texture will be chewy. Look for the lines and cut perpendicular to them.
