Ingredients
- 1.5 lbs Ground Steak (80/20 blend)
- Kosher salt and black pepper
- 1 tbsp neutral oil
- Brioche buns
- Sliced onion
- Pickles, mustard, ketchup

Divide ground beef into 3 oz loose balls. Do not pack them. Season with salt and pepper.

Heat cast iron over highest heat for 3–4 minutes until smoking. Add a thin layer of oil.

Place a ball on the pan. Immediately smash flat with a heavy spatula or burger press. Hold for 10 seconds.

Cook undisturbed 2 minutes until edges are crispy and brown. Flip once. Cook 1 more minute.

Toast buns in the same pan. Build and serve immediately.
Butcher's Tip
The smash creates maximum surface contact with the pan — that's what gives you the crust. Don't smash after the first 10 seconds or you'll lose the juices.
