Ingredients
- 2 lb London Broil
- 4 cloves garlic, minced
- 3 tbsp soy sauce
- 2 tbsp olive oil
- 1 tbsp Worcestershire sauce (kosher)
- 1 tsp Dijon mustard
- 1 tsp black pepper
- Juice of half a lemon

Score the surface of the London Broil lightly with a knife in a crosshatch pattern. This helps the marinade penetrate.

Whisk together garlic, soy sauce, olive oil, Worcestershire, mustard, pepper, and lemon juice.

Marinate the steak at least 2 hours, up to overnight in the fridge.

Broil on high, 4 inches from the element, 5–6 minutes per side for medium-rare. Or grill over high heat.

Rest 10 minutes. Slice very thin against the grain at a steep angle. This is the key to tenderness.
Butcher's Tip
London Broil is a lean cut — it needs the marinade and it needs to be sliced thin against the grain. Do both and it's incredible. Skip either and it's tough.
