Syrian Beef Kibbeh
Ingredients
- 1 lb Ground Steak (shell)
- 1½ cups organic fine bulgur
- 1 small organic yellow onion, grated
- 1 tsp kosher salt
- 1 tsp allspice
- ½ tsp cumin
- ¼ tsp cinnamon
- Black pepper
- Cold water as needed
- 1 lb Ground Steak (filling)
- 1 organic yellow onion, finely diced
- 2 tbsp extra-virgin olive oil
- 1 tsp allspice
- ½ tsp cinnamon
- ½ tsp cumin
- Kosher salt and black pepper
- ⅓ cup toasted pine nuts, optional
- Non-GMO neutral frying oil
- Organic lemon wedges

Cover bulgur with cool water for 15 minutes. Drain and squeeze thoroughly.

Mix bulgur, 1 lb beef, grated onion and spices until cohesive. Add cold water a tablespoon at a time if necessary.

Sauté diced onion in olive oil until softened. Add filling beef and spices and cook through. Cool completely.

With damp hands, form the shell mixture around spoonfuls of filling into oval shapes and seal.

Fry in 350°F oil in batches until deeply browned and safely cooked through.

Drain and serve with fresh organic lemon wedges.

Keep your hands damp throughout shaping — it prevents the shell from cracking and gives you a cleaner seal.
